Cookies and bars are fun and easy to make. Serious crowd pleasers for sure. I know my kids loved them. These recipes are great to bring for class parties, summer BBQ’s, school functions, or just to have when the kids get home from school. Blondie bars are my favorite. Soft and chewy and so delicious. Yummy. And who does not love a homemade chocolate chip cookie? Ok, I have tried and altered many recipes over the years. Some more chewy, some crispier and others cake-like. Each one was good, especially right when they come out of the oven. However, for this page, I choose what I thought was the best one. Soft, chewy, firm but not too crisp. I hope you like them as much as I do! Enjoy!

The Best Blondie Bars Ever
From Rosemary’s Kitchen
9×13 inch pan
Makes @ 24
1/2 cup butter (1 stick) do NOT margarine 2 Tblsp vegetable oil
1 1/2 cup light brown sugar (pressed down) 3 large eggs
1 tsp pure vanilla extract dash of almond extract
2 1/2 cup all-purpose flour 1/2 tsp salt
3 tsp baking powder 1 tsp baking soda
1 12oz package chocolate chips (can substitute other chips and/or nuts)
[I now use dark chocolate chips- or a combo]
Combine all ingredients up to flour, mix well. Gently add flour, salt and baking powder until mixed well. Add chocolate chips. mix again.
Pour into greased 9 x 11 inch pan. Bake at 350 for 20-25 min until golden brown. Do NOT over bake. Should be moist and soft.
I often double this recipe and freeze some…

Sugar Cookie/Cut Out Cookies
[Great for any holiday]
Ingredients
2 sticks Butter (1 cup) – softened
1 cup Granulated Sugar
1 Egg
2 ½ tsp Vanilla extract
½ tsp Almond extract
2 ½ cups all purpose flour
½ tsp salt
½ tsp baking soda
Topping
Granulated sugar (colored for different holidays)
Or decorator icing (see below)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper (or coat with baking spray).
- In a large bowl, cream butter and sugar together until light and fluffy, about 1 minute. Add in the egg, vanilla extract, and almond extract; beat until combined.
- Add in flour, baking soda, baking powder, and salt. Mix until just combined, making sure to scrape down the sides of the bowl every now and again.
- Roll dough into 1″ balls, and roll in sugar (if not planning on frosting them afterwards)
- Place on baking sheet, about 2″ apart. Bake for 10-11 minutes, or until cookies have set.
- Allow to cool.
- Enjoy!
- Feel free to decorate them or cover them with a glaze, if desired. This is the fun part! Your kids will LOVE to help!
Decorator Icing: [Ready in 15 min]
Ingredients
- 1cup confectioner’s (powdered) sugar
- 2 teaspoons milk
- 2 teaspoons light corn syrup
- 1⁄4 teaspoon vanilla extract
- ¼ teaspoon almond extract
- food coloring
Directions
- Stir the powdered sugar and the milk until smooth.
- Beat in corn syrup and vanilla until icing is smooth and glossy.
- If it’s too thick, add more corn syrup.
- Divide icing into separate bowls and stir in food coloring as desired.
- You can dip the cookies, paint them with a paint brush or spread them using a knife or the back of a spoon.
Cookies and Bars tip:
I personally use decorator bags with tips. If you do not have those, use a zip lock bag and cut off the corner to make a tiny hole. This works great for small children. They can squeeze the frosting onto the cookie without as much mess! Enjoy baking with your kiddos!
